On a recent walk my friend and I tried a number of new recipes. One that was suprisingly good was potato rosti. We had problems making patties so ended up frying it altogether in the pan, despite this it tasted really good. To add protein to the meal we added scrambled eggs and a rehydrated vegetable medley (eggplant, zucchini, carrots and capscium) - yes we are vegetartians! This is the recipe for the potato rosti.

3 potatoes (with skin) - boil then simmer for 20 mins. Place in fridge overngiht. Grate then dehydrate (2-3 hours - very quick)
1/2 -1 bunch Shallots - chopped and dehydrated
dehydrated egg powder (amount for one or two eggs)
2 Tbspn flour
salt and pepper
dried rosemary
Ghee - for frying

We used ghee allot to add flavour to our dehydrated meals. It seems to store well in the pack.

I also made chilli con carne (left out the meat - with kidney beans and chickpeas) using a Jamie Oliver recipe and lentil bolognaise ragu (replaced meat with red lentils) and dehydrated both meals. Both were delicious. Had the chilli con carne in tacos with lots of cheese and the left overs for breakfast in tacos the next morning....yum. Think it tasted better the next day!
