Hoping to convince my wife to do an overnighter in mid February staying at Scott Kilvert Hut. I will be the sherpa for all the gear. I want to know if we can rely on drinking water from Scott Kilvert Hut that time of the year or if there are any natural safe drinking water spots around the hut.

If its only an overnighter why not just carry what you need?

I'm not sure what you are like with untreated creek water... me, as long as I'm 90% sure no-one has pooped near it, am happy to drink it untreated.
You can always carry in some tablets or a filter.
I wouldn't drink from the creek next to the hut.
In winter, when the heater is on, I just have boiling water on top of it.
These are the creeks I would drink from untreated. YMMV

How often would the water tank be empty in late summer? I guess there's a big variation in usage, but I'm thinking it rains a fair bit there...

Yes icefest have done so for over twenty years with no adverse reactions and the tank is an asset rarely dry,have also used the Creek next to the Hut in Winter conditions.
The thought of carrying water to SKH is amusing and I suspect written in all due faith without knowledge of the area

Where would you find better water to carry in there than what is already there? (the carpark water comes from the lake, the other facilities water from a creek) You could bring it back up from the coast

One could bring it from Adelaide

And wine from around Adelaide (Barossa, hills, or McLaren Vale) would be worth bringing across Bass straight.
