NZ South Island walks

Hi,
I plan to spend 3 weeks in South Island NZ Jan/Feb 2013. I have read bits and pieces about 'Great Walks' and would appreciate some suggestions. I want to do a couple of 4-6 day walks including a decent peak or two. Is Mount Hopeless a realistic goal for a non climber? :)

Routeburn tied in the Greenstone/Caples is a good choice.

Rees Dart is great too and a little more demanding as it isn't a great walk but I loved it. Cascade Saddle in good weather is amazing.

kepler is a great walk too, as is milford , the other great walks dont climb above the bush much if at all.
waikaremoana has great views.
abel tasman, easy walk lots of nice beaches but loads of people and boats around in summer..
