When you say treks are you referring to day walks or multi day? For day walks a number around Katoomba, Wentworth falls that stick to the top of the cliff line might suit. The coastal walk along the royal national park can be done in sections (with return). Check out wildwalks.com for a selection based on location/difficulty/duration.
I suspect if your sticking to the established tracks that are quite wide and not especially steep the most important factor will be the conditioning and coordination of the walker. As the risk is obviously triping or accidently brushing against a branch etc. Walking poles would be an asset for added stability, prevention of fall. Also be sure to avoid walking after times of recent rain as some tracks can get quite muddy.
