NSW people may want to check out Bushwalking Wilderness Rescue's Remote Area course run by Dave Sheppard. (BWRS is associated with the Confederation of Bushwalking Clubs.)

The course is conducted in a bush setting with realistic and challenging scenarios, and the price (discounted to $250) is very reasonable for four (long) days. 30 people from my club did it last year and none regretted spending the money.
They also run a Senior First Aid course:
Weekend St John Ambulance Senior First Aid courses are a great way to gain some basic first aid knowledge. There is some instruction on splinting and slinging of limbs which bushwalkers could find useful that is no longer commonly taught. The discounted fee of $105 is a considerable saving to learn First Aid with fellow bushwalkers. Additional family members can receive a discount. The next course will be on May 22 – 23, 2010.
